Shrimp + Zucchini Angel Hair Pasta
Shrimp, Zucchini, tomatoe, garlic.
Simple is almost always better.
Ingredients
Zucchini
Tomato
Garlic
Angel hair pasta
Red chili flakes
Salt
Good olive oil
1lb of peeled, devenied Shrimp
Recipe
Sauce
Boil water with one tablespoon of large sea salt
Heat large pan with olive oil. Add chopped garlic and chili flakes. Heat on medium for two minutes.
Add fresh thick diced tomatoes.
After five minutes, add diced zucchini to pan, and simmer.
When pasta has 2-3 minutes remaining on cook time, add Shrimp to pan and cook on medium until pink and cooked.
Pasta
When boiling, add pasta and cook for ~10 minutes, until al dente.
Save 1-2 cups of pasta water
Add pasta direct to pan of sauce with shrimp, add olive oil, and keep heat on low. Mix together and add pasta water if needed, until pasta is covered with sauce.
